Aluminium forms for baking were presented at the international exhibition of household goods HouseHold Expo Spring 2023 by the company "Kukmorskiy Zavod Metalloposudy".The stand of the company from the city of Kukmor (Republic of Tatarstan) demonstrated triangular, round and oval shapes made of aluminium, which are very popular among bakers.Triangular moulds are used to make bread and round moulds are used to make cakes.
"Our products primarily respond to customer demand for familiar bread baking moulds. But we also follow fashion trends - we have baguette moulds in development, for example.Another trend is seen in consumer requests - bread of unusual shape," explains Damir Salikhov, training manager of the Kukmorsk Metalware Plant JSC.
Among the novelties on the company's stand is a cassette of three triangular bread moulds at once. These are made for production in industrial quantities - for bakeries and bakeries. With its very impressive appearance, this aluminium construction is not heavy at all.Among the unique properties of aluminium, for which this metal is so loved by cookware manufacturers, are also high thermal conductivity, resistance to deformation, a wide range of quality processing options and environmental friendliness.
"Why did we choose aluminium? There are several factors.Firstly, metal does not lead under load, it is not subject to deformation.Secondly, it is environmentally friendly food-grade aluminium.Thirdly, it is cheaper than other materials. We have customers who used to make baking trays from steel, but now they want to work with aluminium," says Damir Salikhov.
According to the expert, aluminium moulds last at least five to six years if used properly.Steel, on the other hand, has to be replaced after a year and a half. But of course, in industrial plants where moulds are loaded continuously overnight, they burn out faster.
Interestingly, the mould and the bread baked in it can be branded - text and symbols are applied to the bottom of the mould. The result is a bread that seems to tell its own story about its origins. In the exposition of the Kukmorskiy plant at HouseHold-2023 as an example of branded products were exhibited moulds with non-stick coating, made by order of the Dagestan enterprise Khlebozavod No. 4 (Dagestan).
Kukmara branded products are handmade using the casting method. There are mainly three alloys at work: AK7, AK5 and AK11.Pure aluminium is added to give the composition additional viscosity. The mould making process starts with casting, then the edges of the workpiece are flaked off, followed by the machine grinding the product to remove burrs - the edge is smooth and even. And the product is ready! The walls of the moulds are between 2.5 and 2.8 mm thick, but the wide edge makes them appear thicker.
Damir Salikhov wouldn't be a training manager if he didn't share useful know-how with the stand visitors. Before using the mould for the first time, it is advisable to grease the inside of the mould liberally with oil. Then repeat this procedure two or three more times before baking the bread - the pores will be finally clogged and the bread will not stick to the inside of the mould walls.Modern bakeries are adding emulsions instead of oil - this technology, incidentally, was also demonstrated at HouseHold. These emulsions are non-stick coatings that prevent the bread from sticking to the surface.
Baking moulds, as well as Kukmara-branded cookware, are in steady demand - from Moscow to Vladivostok. In some regions the company supplies its products through a dealer network. For example, supplies go directly to the central regions of the country and the Caucasus.Large enterprises order two thousand moulds, and the minimum volume is from one thousand pieces.
Kukmara products are sold to private customers through the company's online shop. You can also buy the necessary utensils and moulds for baking at the factory itself, located in the Kukmorskiy urban settlement. At the same time to see how the production of metal ware is arranged - the plant has been running a programme of excursions around the enterprise for several years now.
